Nutcracker

From the same family as the plants used to make papyrus, the edible nutsedge, also called “earth almond” or “tiger nut”, has been consumed by humans since ancient Egypt. Very rich in fiber, lipids and proteins, the tubers of this plant are very nutritious and are eaten like nuts; dry, raw or roasted. Today, their sweet and creamy taste, reminiscent of coconut, is popular with the Spanish who make a traditional drink similar to almond milk: Horchata. A surprising discovery to share.
