This work is aimed at a wide audience of lovers of ancient and modern vegetables, gastronomes, but also botanists, biologists, cooks, phytotherapists, agronomists... beginners or experienced. Amaranth, anserine, burdock, cardoon, sow thistle, maceron, rutabaga, Jerusalem artichoke, zizanie… are all “vegetables of yesterday and today” presented in this very complete and richly illustrated work. More than 150 plants are described in the form of fact sheets which include botanical, historical and etymological explanations, but also medicinal and culinary information. “Gardeners” will also find information on growing, harvesting, diseases or pests of each vegetable. This reference work is supplemented by a glossary of medicinal uses, culinary uses and a botanical glossary abundantly illustrated with original watercolors.

Marie-Pierre Arvy, Doctor of Sciences, is a lecturer at the François-Rabelais University of Tours where she directs the Master of Science and Technology “Taste and its Environment”.

François Gallouin is a professor at the National Agronomic Institute Paris-Grignon. He is a Veterinary Doctor, Doctor in Human Biology, Doctor of Sciences, Doctor in History and Philosophy of Science and has a CAP in cooking. He also teaches at the Faculty of Sciences of Tours.
