Originally from Eurasia, this beautiful centaury flowers from June to August, an undeniable asset in the vegetable garden, where it attracts many bees, butterflies and other pollinators.

In addition to their appeal in the garden or in a vase, the pretty edible flowers decorate plates and salads. We also obtain a blue food dye from its florets.

An infusion of blue knapweed flowers helps relieve constipation and, as a gargle, treat irritated gums and ulcers. This infusion with stimulating effects promotes digestion.

This annual plant prefers sun, but can tolerate a little shade. Very adaptable, it grows in well-drained soils which can be very poor and tolerates drought. Other than the occasional aphid, it has no serious insect or disease problems and deer leave it alone.
