The young shoots and flower buds picked early in spring are eaten raw in a salad. As they age, the leaves become tougher and are eaten cooked, like spinach, or in soups where their bitter taste is reminiscent of mushrooms, particularly porcini mushrooms.
You can prepare a lanceolate plantain pesto by adding garlic, olive oil and a little salt to the young leaves!
