Brussels Endive chicory, obtained through a forcing process, offers a delicious combination of crunch and slight bitterness. In Quebec, endive cultivation follows a meticulous process:
Root cultivation
1. Sowing carried out in May. Growing time for roots: approximately 120 days.
2. Harvest the roots and prune them to about 15 cm.
3. Store them in bulk at a temperature of approximately 2ºC, for approximately 6 to 10 weeks.
Forcing
1. Take out the roots, spray them and clean the neck from which the chicory will emerge.
2. Place the roots side by side in a container with a bottom lined with peat moss.
3. Place the container in the dark, at controlled temperature, humidity and watering for 20 to 25 days.
4. Take out the chicory, remove the surface leaves from the endives and enjoy the chicory!
