Also known as miniature watermelon, candied cucumber, mouse melon, zehneria and cucamelon, this curious vegetable produces edible fruits that are harvested when they are between 2 and 4 cm long. They are eaten fresh or marinated like gherkins. Russians are also fond of these marinated vegetables which they enjoy with cold meats. Their pale green and dark green marbled skin is reminiscent of watermelons.
Native to Central America, the Mexican cucumber is easy to grow and can be trained on a trellis or fence where it clings by means of tendrils. A plant can cover almost two square meters and produce between 10 and 15 fruits. Calculate a month between the time of sowing and transplanting outside once the risk of frost has passed.
