The seeds of the Saint Turjan onion, a rare variety of Breton heritage, were offered to us by the Kaol Kozh Association, an association dedicated to the distribution and preservation of Breton peasant seeds. The Saint Turjan onion, an agricultural treasure inherited from the island of Oléron, is an exceptional variety also known as “rosé des sables”. This poetic name reflects its distinctive pink-purple color and its origin in sandy soils, where it develops its remarkably sweet flavor. These onions, round and attractive, lend themselves equally well to the creation of bunches for direct sale and to long-term conservation. Saint Turjan is famous for its fragrance, capable of beautifying any dish, whether served raw or cooked. Unfortunately, this variety had almost disappeared, but today it is experiencing a renaissance thanks to the efforts of many seed preservation organizations like Kaol Kozh.
