This vegetable produces beautiful, rounded, shiny green leaves, which are almost as rich in beta-carotene as carrots. They are also a good source of vitamins A and C, and iron. Very resistant to cold, lamb's lettuce is sown very early in spring or at the end of summer in soil enriched with compost. You can also sow seeds indoors six weeks before the estimated planting date in the garden (as soon as the soil is worked). It is good to thin the seedlings to about 15 cm to obtain larger plants.
