A climbing plant of tropical origin, Malabar spinach, Ceylon spinach or basella likes the hot and humid temperatures found on the Malabar Coast, a region located on the southwest coast of the Indian peninsula. It then climbs up to 2 m in height, but its size is more modest when the climate is less favorable. This pretty plant with pink flowers is distinguished by its red-mauve stems garnished with green mucilaginous leaves which are eaten like spinach, lightly cooked or sautéed in a pan.
These leaves are harvested while they are still young. Baselle contains little oxalic acid, but a lot of vitamins A and C and trace elements. In cooking, it goes wonderfully with rice, couscous and cereals, as well as pasta or mashed potatoes.
