Frankly delicious, the red, toothed leaves are used in salads when young, while the taste of steamed older leaves rivals that of the best kale. As for the head, it is distinguished by succulent purple stems topped with clusters of sweet-tasting green grains that do not have the bite of traditional raw broccoli.
