This watercress likes water and is grown in soil that is always moist, but light. When its stems bend and its foliage yellows, its water needs are not met. Plants watered copiously at least three times a week will go to seed less quickly.
In cooking, we add the raw leaves and flowers to salads. Their spicy and fragrant taste is reminiscent of nasturtium. The leaves are also used to flavor meat or vegetable dishes and soups: they are then added just before serving.
