Spinach Strawberry – Organic

Chenopodium capitatum

4.19$

Neither spinach nor strawberry, this annual vegetable plant stands out with leaves reminiscent of spinach, as well as very decorative red fruits.

Because it is a cool plant, it can be sown directly in rich, cool soil in May or August. The harvest of the dark green triangular leaves grouped in a rosette begins two months after sowing and continues throughout the season.

From late spring until August, stems measuring up to 1 m long bear small green, apetalous flowers gathered in the axils of the tallest leaves.

As with the strawberry plant, these flowers transform into edible, red pseudo-fruits, which usually ripen from July to October.

Strawberry spinach grows most vigorously in the sun, but it suffers from intense heat. In regions with very hot summers, it is best to grow it in a partially sunny corner of the garden and cover the roots with a good layer of mulch.

In the kitchen

The leaves have a very pleasant nutty taste in mixed salads or cooked like spinach. Their oxalic acid content, however, calls for moderation on the plate.

The mild taste of the fruits cannot be compared to that of strawberries, but they make good juices, jellies, coulis and jams. You can also eat fresh fruit added to a fruit salad or use it to decorate desserts.
