Close relative of our wild nutsedge, the edible nutsedge, chufa or earth almond, is distinguished by wrinkled almond-shaped tubers which develop under the plant. Also, unlike our invasive nutsedge, its frost-prone tubers do not survive our winters.

From the same family as papyrus, yellow nutsedge is one of the oldest cultivated plants of ancient Egypt. Perennial on the banks of the Nile, it must be resown every year in Quebec. Its small edible bulbs are delicious and can be eaten in flour, raw, cooked, or roasted, just like nuts. They are very rich in fiber, lipids and proteins. Their crunchy skin contains a creamy flesh with a sweet coconut flavor. The Spanish love it and make a traditional drink similar to almond milk called horchata de chufa.

Here are some important details regarding sowing. Seeds must be soaked in water for 24 hours before sowing. Also, be careful not to get rid of anything that hasn't germinated too quickly. Some seeds take much longer than others to germinate.
