In addition to being a highly ornamental plant, 'Golden Giant' amaranth produces abundant edible seeds whose high nutritional value surpasses those of most cereals. The seeds are harvested from September. They are used popped, like corn kernels; in oatmeal; in flour, for making cakes or muffins; or as is, like poppy seeds. This plant reseeds and grows quickly once established. It reaches 1,5 m in height and is adorned with remarkable orange-yellow flower spikes 30 cm long.
