In addition to their appeal in the garden or in a vase, the pretty edible flowers decorate plates and salads. We also obtain a blue food dye from its florets.

An infusion of blue knapweed flowers helps relieve constipation and, as a gargle, treat irritated gums and ulcers. This infusion with stimulating effects promotes digestion.

This annual plant prefers sun, but can tolerate a little shade. Very adaptable, it grows in well-drained soils which can be very poor and tolerates drought. Other than the occasional aphid, it has no serious insect or disease problems and deer leave it alone.
