They are eaten fresh or marinated like gherkins. Russians are also fond of these marinated vegetables which they enjoy with cold meats. Their pale green and dark green marbled skin is reminiscent of watermelons.
Native to Central America, the Mexican cucumber is easy to grow and can be trained on a trellis or fence where it clings by means of tendrils.
